Salsa verde is the most often used salsa in the Mexican home, at least where I come from. Primarliy used on tacos and tamales, it is a good basic salsa that can even be used for dipping totopos (tortilla chips). It tends to be more flavorful than the typical red salsa that we are use to here in the States.

Ingredients:

1/3 of a bunch of cilantro
1 to 1-1/2 pounds of tomatillos.

1 cup of chopped onions
3 whole chile serrano (jalepenos will work if you can not find the serrano)
1 clove of garlic
salt to taste (sea salt is best but regular salt is fine)
2 tbls of Corn Oil

Instructions:

Shell and wash the tomatillos and boil them along with the chile serrano in about 1/2 cup of water in a covered sauce pan.

In a one quart sauce pan sauté the onions, garlic in the corn oil.

After the tomatillos have become lighter green color and soft to the touch, put them in a blender along with the cilanto and the sauted onion and garlic

Blend all of it on high to a smooth consistancy.

Salt to taste.

Note: In Mexico it is very typical to boil the chile for a good hour before using them, especially if you use jalepenos.
